Join me with an introduction to ganache and learn how to create this really yummy Belgian chocolate cake, finished with a fresh fruit decoration!
Ganache is made from a mix of chocolate and cream, and sets firm. Perfect for adding extra stability to your cakes, this is also the perfect base to use for covering your cakes with sugarpaste. Whilst working with sugarpaste, also known as fondant is not included in this course, if you’d like to learn, take a look at my Private Ganache and Icing Course course.
This 5 hour class is perfect for all decorating skill levels as I’ll be teaching all the tips and tricks needed to create this beautiful design. Working with ganache is the first big step to icing your cakes with sugarpaste/fondant.
What is involved?
In this introduction to ganache course we will:
- Learn how trim, stack, fill with vanilla bean buttercream, and crumb coat a 7” chocolate fudge cake with a rich dark chocolate ganache.
- Discover the importance of having a flat, stable foundation to begin decorating.
- After chilling in the fridge we will look at how to apply a top coat of ganache. We will create a super smooth finish with a sharp top edge.
- Learn how easily melt chocolate without losing temper, and return melted chocolate to temper if needed. Without all the fuss of heating up and cooling down needed for standard chocolate tempering.
- To finish we will be looking at creating chocolate dipped strawberries, and decorating your cake with these.

Classes will be held in my purpose built kitchen studio in Billingshurst, West Sussex RH14, on weekends only, and will run for approximately 4 – 4.5 hours.

Please note that whilst it is possible to complete this class sitting, it is far easier to do so standing. As such for most of the session we will be standing. If you are not able to stand for this length of time, please do let me know in advance as seated positions are limited.
There is a limited amount of free parking available at the studio. If you can’t find a space to park then there is paid parking in the nearby library car park, about 3 minutes walk away.
No tickets will be posted to you. Simply turn up on the day with your confirmation email (no need to print if this is on your phone to show me).
*The cake in the images are an example of what your cake could look like, and demonstrates the skills learnt in this class. Everyone is free to adjust their designs to suit their own tastes.
Allergens:
In this introduction to ganache course we will be using strawberries, wheat based flour, eggs, dairy and soya based products. No nuts will be used in the recipes for the class, however cakes are made in the kitchen which use nut and nut products.
Terms and Conditions
PAYMENT:
1.1 You’ll receive an email after your purchase confirming your booking. Once booked, classes are non refundable and non transferable, excepting conditions in section 2.
1.2 Your place on a course cannot be guaranteed until full payment has been made.
1.3 Full payment must be made and received at the time of booking.
CANCELLATION BY YOU
2.1 You may cancel your place on the course up to 8 weeks before the course start date. Under these circumstances you will be entitled to a full refund of your course fees.
2.2 If you cancel 3-8 weeks before the course start date you will be entitled to a 50% refund.
2.3 Cancelling within 3 weeks or less of the course start date will mean you are not entitled to a refund, however, at our discretion and availability, you may be offered a place on another course of the same or lesser value on a future date. If the replacement course has a higher value, then you will need to pay the difference. If the course has a lower value you will not be entitled to a refund of the difference.
2.4 If you wish to cancel your place on a booked course, please do so in writing to carrie@caritascakedesign.co.uk. Please note refunds may take up to 2 weeks to process.
CANCELLATION BY US
3.1 If in the unlikely event we need to cancel a course, we will endeavour to give you at least one week notice. You will have the option of rebooking onto the same course at a later date, another course of the same value, using your booking fee as a credit towards a higher value course, or a full refund. Please note that full refunds may take up to three weeks to process.
3.2 We will not be liable for any losses (including, but not limited to travel, accommodation or loss of earnings) incurred as a result of the course cancellation or modification as set out above, beyond the cost of the course fee.
NON ATTENDANCE
4.1 If you are unable to attend a course due to personal or professional reasons, you will not be entitled to a refund, one to one tuition to make up for the missed learning opportunity, or automatic transfer to another date. However, we will consider such action as we consider to be fair and reasonable.
4.2 Please note that if alternative options are offered, there may be an additional charge.
4.3 Whilst we wish to fair and take your circumstances into account when looking at transferring your course fees, if you do not give us any prior notice of non attendance, or simply just don’t turn up on the day, then you will not be entitled to any form or refund or alternative arrangements.
